Split Pea Soup

I had a pound of dry split peas and some veggies I needed to use, so I threw them all together to make my first ever split pea soup.  I was skeptical at first, but I ended up very pleased with the tasty result.  This recipe is 100% healthy and also vegan.  I’m definitely tucking this one away for future use.

Ingredients:

- 1 tablespoon olive oil
- 2 potatoes, peeled and chopped
- 1 cup onion, chopped
- 1 cup carrots, chopped
- 3 cloves garlic, minced
- 1 teaspoons salt (or more, to taste – I added more)
- 7 cups water
- 2 cups (1 pound) dry split green peas
- 1/2 teaspoon dried basil
- fresh ground pepper
(other herbs/seasonings as desired, I like Lemon & Pepper Seasoning Salt)

Directions:

Saute vegetables in olive oil for about 5 minutes. Add water and salt and bring to a boil. Add peas, basil, and other seasonings. Stir, cover with lid tilted, and let simmer for about 35 minutes or until peas reach desired tenderness, stirring occasionally. For a creamy texture, puree half of the soup in a food processor and return it to the pot to combine with the rest of the soup. Season to taste and enjoy!
