I recently created this recipe and was surprised at how yummy these muffins are, considering they are both vegan and VERY healthy. When I get the time, I’ll figure out the nutritional information.
1/2 to 1 c. soymilk (depending on how moist you like your muffins)
1 t. vanilla
1/2 c. honey
1/3 c. oil OR 1T flaxseed meal combined with 3T warm water.
1 c. oats
1 c. whole wheat flour
1 t. baking powder
1/2 t. soda
1/4 t. salt
1/2 t. cinnamon
1 cup frozen blueberries
Mix soymilk, oil, vanilla, and honey.
In a separate bowl, combine oats, flour, powder, soda, salt, and cinnamon.
Fold together.
Gently fold in blueberries.
Grease muffin tin if not using cupcake liners.
Bake at 400 degrees for 20 minutes.
Makes about 12 muffins.
Note: I hear that substituting some of the honey for applesauce is also delicious.

Sugars: 13.5g (this number can be adjusted by altering the amount of honey)

**These facts are based on the recipe if flaxseed meal is used instead of oil. The oil increases the number of calories to 150 and the fat grams to 7
